I've managed to find a contact at the SAIC factory, and I'm trying to ask about CANBUS/PID documentation, but they do not understand what I am asking for. Is there a specific document or manual I could ask for? The service manual contains information about physical wiring and components, but nothing about the "digital world".

No, unfortunately I didn't find anything.
I reverse engineered to make it more or less useful, by scanning the bus.
On my Maxus T90EV there is a second canbus in the obdii connector which probably has more battery and charging related info.
